CHOCOLATE PEANUT BUTTER PRETZEL CRUNCH COOKIES




I am a SUCKER for sweet and salty food. Reese's peanut butter cups? Love 'em.  Chocolate covered pretzels? Yes, please!  and of course kettle corn! (just to name a few). It only makes sense that one day, I would figure out a cookie that is the perfect combination of sweet and salty... TA DA! The Best peanut butter cookie you'll ever have. You. Are. Welcome.




These cookies have a certain element to them that other cookies do not; mainly because of their special add-ins: Trader Joe’s Milk Chocolate Covered Peanut Butter Pretzels. That's a mouthful, I know. But your mouth will be full of them if and when you try them. The sweet little bonus to this is that these babies are packed with an unreal taste and crunch and contain no artificial flavours, colours or preservatives. This helps me justify the fact that I can eat 5 cookies in one sitting. 

I realize some of you may be like, there's no Trader Joe's near me, waaahhh... I'm deeply sorry if this is the case because you obviously cannot make these delicious cookies then, however, you can get creative... I've seen p.b filled pretzels all over the place (Costco even has them on occasion). Maybe they aren't covered in chocolate but you can always do that yourself or simply add milk chocolate chips! mmm....delightful.

What you need:
3/4 C all purpose flour
pinch of salt
1/8 tsp. baking powder
1/8 tsp. baking soda
1/4 C brown sugar plus about 2 tbsps.
1/4 C white sugar 
1/4 C margarine
1 large egg
1/2 C peanut butter
1/4 tsp. vanilla
1/2 C slightly crushed Milk Chocolate Covered Peanut Butter Pretzels (more or less depending on how much you like)

What you need to do:

Preheat the oven to 350.

Sift together the flour, salt, baking powder and baking soda in a small mixing bowl. Set aside.


In a separate large mixing bowl, mix sugars and margarine. Cream well.



Beat in the egg, then peanut butter. Mix in the vanilla extract. 

Blend the dry ingredients into the peanut butter mixture.

Gently stir in the crushed Milk Chocolate Covered Peanut Butter Pretzels
--of course I forgot to take pictures of these steps!



Roll into good sized balls and place on a cookie sheet. Flatten lightly with a fork, making the infamous criss-crossy sign on peanut butter cookies (aka a cross hatch-- can also be done with a mallet!) 

Bake for 7-9 mins, until edges are lightly golden. Let set on the pan for a couple mins, then transfer to a wire rack to cool and enjoy!
